I was up from bed early this Sunday morning. My eyelids do still feel heavy and my mouth keeps yawning. In two hours I am off for a run with Frida so I felt I needed a big energy breakfast in good time before that. I made porridge out of 1 dl fiber oats, one half banana, quite a lot of blueberries, and then I served it with “oat-milk” or “oat-drink”, I am not really sure what the english word for it is. Other than running I have got to do studies and laundry. Thank god that the weather is grey today. It makes me feel better about being inside doing necessities! xx

Hello out there! I hope you guys are good and that you are making the best out of this…..snowy day? But its spring!! This only happens in April – the day starts off with spring feelings and ends up with snow fall! Oh, well…

My snowy Wednesday snack is a mango smoothie! I don’t think I have ever used mango in my smoothies before. I normally think that mango has a weird “soap-texture”, especially if you eat the frozen pieces, but to have it mixed worked great – all I tasted was the good flavour! In my smoothie I mixed one banana, 100g frozen mango pieces and 2dl of oat milk. For decoration I used a little bit of mango and coconut flakes. Refreshing, healthy and very tasty! Now its study time and then I am off to Frida’s house for a cosy night with friends from school! xx

I managed to mix together a very tasty vitamin boost smoothie earlier today! Even David thought it was really fresh and nice, but I did have to lie and say it wasn’t celery in it before he drank it – I was busted after his first sip, haha! I think smoothies are perfect snacks in between meals, they are filling, but not heavy.

1. I used 3 dl of water and a big handful of seasonal salad mix and blended it together until smooth.

2. Then I added one stick of celery, one banana (I changed the apple on the pic to one banana instead), one peeled pear and a kiwi – mix at high-speed!

3. And then I finished it off with the juice from half a lemon and 2 teaspoons of honey, and then I did one last short blend! Ready to serve!!
