Sunday is brunch day! Don’t you think? After a sweatie session at the gym this morning I thought I deserved a little brunch with mini pancakes. I used an original recipe for the pancakes but I also added quark (good source of protein) and flaxseed (high in fiber and omega-3 fatty acids) to it, and instead of regular milk I used oat milk. The jam is a home-made black currant one. For the smoothie I used 1 dl of frozen mango, half a banana, 1/2 dl oat milk and 1/2 dl of water. This is easily my favourite smoothie. It’s sweet but very refreshing. Now I am all ready to sit down with my studies. Labour law here we go!! xx
